This simple Italian recipe for a refreshing appetizer is the ideal way to start a summertime meal. Ingredients:
1 loaf ciabatta |
1 red onion, finely sliced |
1/2 cucumber, chopped |
1 lb ripe tomato, chopped |
fresh basil, shredded |
8 tablespoons olive oil |
3 tablespoons white wine vinegar |
salt |
fresh ground black pepper |
Directions:
1. Slice the ciabatta into 1in cubes. Place in a large salad bowl. 2. Add the red onion, cucumber, tomatoes and basil. 3. Whisk together the olive oil and wine vinegar. Season with salt and freshly ground pepper. 4. Toss the dressing with the bread salad. 5. Cover and chill for 2-3 hours before serving. |
