Tuscan Bean and Pasta Toss |

From a humble can of beans comes this delicious dish that is so tasty that it will burst on your tastebuds on the first bite!! Ingredients:
6 cups hot cooked short pasta such as fusilli or 6 cups penne |
4 cups baby packed spinach |
1 (540 ml) can six bean blend, drained and rinsed |
1/3 cup pesto sauce |
1/4 cup sun-dried tomato, blanched and thinly sliced |
1 teaspoon grated lemon zest |
1 tablespoon fresh lemon juice |
1/4 teaspoon hot pepper flakes (optional) |
1/2 cup italian cheese blend, shredded |
Directions:
1. Toss hot pasta with spinach, beans, pesto, sundried tomatoes, lemon zest, lemon juice and hot pepper flakes, (if using). Transfer to a serving bowl, and sprinkle with shredded cheese. Serve immediately. |
