This is an incredible cake that is bursting with great chocolate and caramel flavors. This is my cousin's recipe and one she makes often for her family. Enjoy Ingredients:
2 cups cake flour |
1-3/4 cups granulated sugar |
1/2 cup cocoa |
1 teaspoon salt |
1 tablespoon baking soda |
1 egg |
2/3 cup vegetable oil |
1 cup buttermilk |
1 cup hot coffee |
frosting |
6 tablespoons butter |
1/2 cup milk |
1 cup granulated sugar |
2 cups semisweet chocolate chips |
3/4 cup caramel |
1-1/2 cups toasted pecans |
Directions:
1. Combine egg, oil and buttermilk. 2. Combine dry ingredients then add wet to dry until well mixed. 3. Slowly pour in hot coffee then scrape bowl and pour into 3 greased and pepper cake pans. 4. Bake at 350 for 30 minutes then cool cake completely. 5. Mix sugar and milk in saucepan then add butter and bring to a boil. 6. Remove from heat and add chocolate chips to pan then whisk until smooth. 7. If frosting is too thick or grainy add one or two teaspoons hot coffee. 8. Spread 1/3 of the frosting then sprinkle 1/2 cup pecans and drizzle 1/4 cup caramel on first layer. 9. Repeat for each layer. |
