Turnips With Apples And Leeks |

This uses two ingredients in the Dogma Box, apples and turnips Ingredients:
4 tablespoons vegan margarine |
2 lbs. turnip, peeled and cut into 3/4 inch cubes |
2 leeks, medium sized, cleaned, halved and sliced |
2 apples, firm, tart |
1/2 cup fruity white wine, such as riesling or moscati |
1 teaspoon succanat or brown sugar |
1 sprig thyme |
pinch salt |
pinch pepper |
Directions:
1. Melt the margarine in a wide skillet over medium heat. 2. Add the turnips and saute until they begin to brown, about 7 minutes. 3. When the leeks begin to soften, add the apples and cook for 2 minutes longer. 4. Add the wine and cook until the liquid is reduced to 2 tablespoons. 5. Add 1/2 cup of water, sugar, thyme, salt and pepper and simmer until the turnips are nearly soft, about 5 or 10 minutes longer. 6. Remove them to a bowl with a slotted spoon. 7. Turn the liquid to high and reduce the liquid until it is thick enough to coat the vegetables. Adjust the seasonings. |
