Simple low-carb hash brown ready in minutes. I put this together to act as the base for a Mothers Day Brunch Egg Casserole. Usually the casserole would call for cubes of bread or potato hash browns. Read more . Too many carbs for this girls diet. Ingredients:
2 fried slices lower sodium bacon |
2 cups turnip, raw |
1/2 cup onions |
1/2 cup parsley |
1/2 tsp hungarian hot paprika |
1/8 tsp cloves, ground |
1/2 cup zucchini |
1 egg yolk |
Directions:
1. Shred the turnips, 1/2cup onions, 1/2 cup zucchini. Wrap shredded veggies in paper towel, roll and squeeze out moisture. 2. Chop the bacon the fry it up. Remove the cooked bacon and add to the hash brown mix. 3. In the bacon pan on high heat, Place turnip mixture into pan and flip when golden brown. About 3-4 minutes on each side. 4.
