From the good people of Moosewood Restaurant. Ingredients:
1 medium onion, chopped |
1 tablespoon vegetable oil or 1 tablespoon butter |
3 medium-large turnips, peeled and chopped (about 3 cups) |
3 large pears, peeled, cored and chopped (about 3 cups) |
1 teaspoon dried thyme |
1/2 teaspoon salt |
1 1/4 cups pear juice or 1 1/4 cups apple juice |
fresh ground black pepper, to taste |
shredded radish |
raspberries |
Directions:
1. Saute onion in butter or oil, until translucent. 2. Add chopped turnips, apples and thyme. 3. Saute for 10 minutes, stirring frequently. 4. Add fruit juice and cook on low heat until turnips are tender. 5. In a blender, food processor, or using a stick blender, puree until thick and smooth. Add black pepper to taste. 6. Serve with optional garnishes, if desired. |
