One of the best recipes I've ever tasted for turnips (other than those lovely greens). Adapted from the classic Silver Palate. Ingredients:
1 pound of turnips about 4 of them |
3 ripe but still firm pears |
4 tablespoons of butter |
2 shallots |
1/2 cup of walnut halves |
1 tbsp of honey |
1/3 cup of crumbled blue cheese |
chopped fresh parsley |
Directions:
1. Peel the turnips and cut in half, then slice. 2. Cut the pear in half, Core and cut in slices. 3. Melt the butter in a large skillet and saute the turnips until golden about 7 minutes. 4. Add the pears and the shallots. 5. Cook another 4 minutes or so to soften the shallots. 6. Add the walnuts and cook until heated through, about 2 minutes. 7. Season with a pinch or two of salt, some grinds of black pepper. 8. Drizzle with honey and top with crumbled blue cheese and chopped parsley and serve. |
