Turnip And Bacon Frittata |

Mushrooms, green onions, turnips and a jalapeno for a kick all sauted up with bacon in this hearty egg dish. Ingredients:
7 fried slices bacon, 40% less fat center cut |
1/2 cup baby bella mushrooms |
1/2 cup raw turnip |
1 jalapeno pepper |
1/4 cup onions, green |
6 egg |
1/4 cup unsweetened almond milk |
1/2 cup monterey jack cheese with jalapeno peppers |
2 tsp basil (dried) |
1/4 tsp real iodized salt |
1/4 tsp ground black pepper |
Directions:
1. Chop and fry the bacon. Scoop it out of the pan and let it drain on paper towel. 2. In the drippings from the bacon saute the mushrooms, turnip, jalapeno and green onions. 3. Whisk the eggs with the almond milk, salt, pepper and basil. 4. Pour the egg mixture slowly over the sauted vegetables and distribute the vegetables evenly across the pan. 5. Sprinkle the bacon bits across the pan and top with the shredded cheese. 6. Turn the heat down to 3 and cover the pan. Let cook for about 10 minutes until eggs are well set. 7.
