Turmeric Mushrooms And Corn

Part of an exotic Indian feast
Ingredients:
1/40cup vegetable oil
2 corn cobs,remove kernels
2 onions chopped
2 cardamom pods
1 cinnamon stick
1 small birds eye chilli finely choped
1 tsp ground turmeric
500g button mushrooms
1/4 cup chopped coriander
1 tblsp lemon juice
Directions:
1. Heat 1 tblsp oil in large saucepan on medium.Cook corn for 3 mins, until tender remove.
2. Heat remaining oil in same pan on low.Add onion,cadramon.cinnamon stick,garlic and chilli.cook 15mins stirring until tender and caramelised
3. Stir through turmeric mushrooms, corn and 1/2 cup water. Cook on med heat 4 to 7 mins until mushies are tender.srason add coriander and lemon juice Serve With baked spicy chiken beef kofta pappadums and cardamom pudding all recipes to follow
