Turkish Sulu Patates ( watery Potatoes)

This is another simple Turkish recipe that I learned while living in Turkey. It consists of potato and chicken cubes in a thin, tomato water. It makes a nice, light lunch that's perfect for Istanbul's rainy winter days. Afiyet olsun!
Ingredients:
5 potatoes (cubed)
2 chicken breasts (cubed)
2 tomatoes (see step 1 for preparation)
1 medium onion (minced)
1 tablespoon red pepper paste (plus some or large tbsp)
4 tablespoons oil
Directions:
1. Cut the tomatoes in half, dividing the top from the bottom. In a medium-large pot use a grader to shred the tomatoes until all that is left is the skin. Discard the skin.
2. Adding onions, pepper paste, and oil to pot, stir over high heat until onions are soft.
3. Add potatoes, cook 5-10 minutes stirring occasionally.
4. Add chicken, cook until just white.
5. Add hot water until food is covered (a little more than 2 drinking glasses should be enough).
6. Cook until potatoes are done (~25 minutes).
7. Serve with red pepper flakes to season.
