I found this several years ago on a cooking site. Ingredients:
1/4 cup chopped walnuts |
1 (7 ounce) jar roasted red peppers, rinsed |
1/2 cup fresh breadcrumb |
1 large garlic clove, crushed |
1 tablespoon extra virgin olive oil |
1 tablespoon lemon juice (to taste) |
1 1/2 teaspoons ground cumin |
1/4 teaspoon crushed red pepper flakes |
salt |
Directions:
1. Toast walnuts in a small dry skillet over medium heat, stirring, until fragrant, 2 to 3 minutes. Transfer to a small bowl and let cool. 2. Combine all ingredients in a food processor and process until smooth. 3. Adjust seasoning with more lemon juice and salt, if desired. |
