Ingredients:
1/2 cup (fine) breadcrumbs, or 1 slice bread, dried
3/4 pound ground turkey
3/4 pound ground pork
1 cup grated carrot
1/4 cup grated onion, fresh
1/2 cup chopped parsley, flat-leafed
3 tbsp milk
2 tsp curry powder
1 tsp salt
1/4 tsp black pepper, freshly ground
1 large egg, beaten
1 clove garlic, minced
2 large eggs, hard boiled, shells removed
3 medium slices pork bacon
Directions:
1. Preheat the oven to 400 degrees.
2. Place the dried bread slice in a food processor and pulse to fine bread crumbs.
3. Combine 1/2 cup of the crumbs with the next 11 ingredients (through garlic) in a large bowl and mix thoroughly.
4. Place half of the meat mixture into a 9-in glass loaf dish. Arrange the hard-boiled eggs end to end, on top. Spread remaining meat mixture on top. Lay the bacon slices lengthwise across the top of the loaf.
5. Bake at 400 degrees for 50 minutes or until juices run clear. Let the meat loaf stand about 10 minutes. Drain off any liquid before slicing.
