Turkish Fried Veg With Yoghurt Topping |

This is a truly fab dish tasty and healthy to boot! My husband hates all the veg in this one and won't eat yogurt but loves this dish!!!! I watched my friend in turkey make this so it's pretty ethnic and lovely. Read more . I make it myself quite often Ingredients:
the veg |
2 large aubergine |
3 peppers |
dried chillies -fresh chillies |
3-4 zucchini |
the tomato middle |
tin of tomatoes or fresh |
good squeeze of tomato paste |
1 onion, chopped |
dried chilies to taste |
garlic |
olive oil for lightly frying |
salt and fresh ground black pepper to taste |
yogurt topping |
3-400ml of yogurt |
1 clove garlic |
Directions:
1. Brown onion and garlic in oil 2. add tomatoes and tom paste 3. gently simmer for about 20 min ish 4. Meantime take the aubergine by the stem and burn directly in a gas flame 5. you will see the purple skin blacken 6. keep turning it in the flame until it is all charred 7. gently rinse under cold water until all you have is the good bit 8. slice all the veg into long strips gently fry in griddle pan with small amount of olive oil sprinkle liberally with chillies and black pepper 9. salt to taste 10. when veg are done lay in dish 11. pour over the tomato 12. poke a fork into a clove of garlic and whisk around in the yogurt add salt if you like 13. pour this over the top of the tomato 14. enjoy |
