This soup is very good in the winter to warm up after a cold snap, but makes a good meal in any season. You can replace the turkey wings with chicken wings or drums if you like Ingredients:
40 oz turkey, all classes |
1 onion |
2 carrots |
1 cup celery |
1 sweet red pepper |
5 tomatoes, diced |
1/4 cup parsley |
1 cup lime juice |
1 t salt |
20 cups water |
Directions:
1. Cut turkey wings in edible portion sizes. 2. Pour 20 cups of cold water in a medium size pot, add salt and the wings and bring it to a boil temperature. Then reduce it to medium heat untill all meat is tender ( about 1/2 hr). Make sure when starts to boil, take the foaming stuff with a slotted spoon and discard. 3. In the mean time chop onion, pepper, celery, carrots and add to the boiling soup. At medium heat boil the veggies as well for another 1/2 hr and then add tomatoes peeled and diced. When tomatoes are cooked (about 10' ) add chopped parsley and lime juice to taste. 4. Makes 15 servings |
