Use leftover cooked turkey breast or poach fresh turkey cutlets for this salad.
Ingredients:
1/4 cup light mayonnaise
3 tablespoons fat-free sour cream
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups cubed red delicious apple (about 1/2 pound)
1 1/2 cups cubed cooked turkey breast
1 cup seedless red grapes, halved
1/2 cup diced celery
2 tablespoons chopped walnuts, toasted
lettuce leaves (optional)
Directions:
1. Combine first 5 ingredients in a small bowl; stir with a whisk.
2. Combine apple, turkey, grapes, celery, and walnuts in a bowl. Stir in mayonnaise mixture; cover and chill. Serve on lettuce leaves, if desired.
