Use leftover cooked turkey breast or poach fresh turkey cutlets for this salad. Ingredients:
1/4 cup light mayonnaise |
3 tablespoons fat-free sour cream |
1 tablespoon lemon juice |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
2 cups cubed red delicious apple (about 1/2 pound) |
1 1/2 cups cubed cooked turkey breast |
1 cup seedless red grapes, halved |
1/2 cup diced celery |
2 tablespoons chopped walnuts, toasted |
lettuce leaves (optional) |
Directions:
1. Combine first 5 ingredients in a small bowl; stir with a whisk. 2. Combine apple, turkey, grapes, celery, and walnuts in a bowl. Stir in mayonnaise mixture; cover and chill. Serve on lettuce leaves, if desired. |
