Here's another cool main dish salad for hot summer days. Use leftover or purchased cooked turkey (chicken works too) and keep the kitchen cool. Number of portions is an estimate depending upon serving size and whether you use it as the main course or as a side.
Ingredients:
2/3 cup mayonnaise
2 tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
2 cups diced cooked turkey (or substitute chicken)
1 red apple, cored and diced
1 green or yellow apple, cored and diced
2/3 cup sliced celery
1/2 cup chopped walnuts
lettuce leaves, for serving
Directions:
1. Mix together mayonnaise, lemon juice, salt and pepper.
2. Add turkey, apples and celery to the dressing and toss until well coated.
3. Cover and chill until ready to serve.
4. To serve, line serving dish with crisp washed lettuce leaves. Cover with salad and top with the walnuts.
