Turkey, Veggie and Rotini Casserole |

A warm family favorite, easy to make ahead of time and full of hidden vegetables Ingredients:
1 lb. ground turkey breast |
13 1/4 oz. barilla plus rotini |
14 1/2 oz. diced tomatoes |
6 oz. baby spinach |
1 1/2 oz. shredded carrots |
1 cup sliced mushrooms |
737 g spaghetti sauce |
1/2 cup grated parmesan |
2 tablespoons reduced fat sour cream |
2 cups reduced fat mozzarella cheese |
Directions:
1. Prepare pasta per package instructions 2. Brown and season turkey to taste ( i add basil, oregano, garlic powder, onion powder, salt, pepper) 3. Soften carrots 4. Steam Spinach 5. Combine all ingredients except mozzarella in pot the pasta was cooked in and mix until they are evenly distributed 6. Empty into large casserole dish (or two medium) and heat in 350 degree oven for 20-30 minutes or until cheese is melted |
