Ingredients:
1 pound ground turkey |
1 cup chopped onion |
1 garlic clove, minced |
1/2 cup chopped green bell pepper |
1 (14 1/2-ounce) can diced tomatoes |
1/4 cup tomato paste |
1 tablespoon prepared mustard |
1 teaspoon chili powder |
3/4 teaspoon ground cumin |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
4 (2-ounce) kaiser rolls or hamburger buns, split |
1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese |
Directions:
1. Cook turkey, onion, and garlic in a large nonstick skillet over high heat until browned, stirring to crumble. Stir in bell pepper and next 7 ingredients (bell pepper through black pepper). Bring to a boil; cover, reduce heat, and simmer 10 minutes. 2. Spoon 1/2 cup turkey mixture onto each roll half; top each with 2 tablespoons cheese. |
