Tired of tasteless soups? You won't find that here. A simple, spicy rendition of tortilla soup that will wake your senses and taste buds. Ingredients:
2 cups turkey, cooked and chopped |
1 1/4 cups chicken broth |
1 tomato, diced |
1 avocado - peeled, pit removed and minced |
1 jalapeno pepper, seeds removed and finely diced |
12 (6 inch) corn tortillas, sliced into 1/2 inch strips |
1 cup cheddar cheese, shredded |
1 1/4 cups enchilada sauce, green |
1 1/4 cups enchilada sauce, red |
1 tsp ground cumin |
1 cup half-and-half |
Directions:
1. Mix together chicken stock and tortilla in a large pot. Cook over medium heat until the tortilla softens, and broth thickens a little. Add in the enchilada sauces and cumin then the turkey and half-and-half; heat but do not bring to a boil. 2. Split the soup between 4 bowls, garnish with tomato, avocado, jalapeno, and cheese. |
