8 taco shells |
1 1/2 tablespoons vegetable oil |
2 cups shredded cooked turkey |
1/2 cup chopped white onion |
1 teaspoon chili powder |
1/2 teaspoon ground cumin |
salt and pepper |
1/2 cup salsa |
1 cup shredded iceberg lettuce |
1 cup shredded monterey jack cheese |
2 tablespoons chopped fresh cilantro |
Directions:
1. Preheat oven to 350*. Wrap taco shells in aluminum foil and warm in oven for 5 minutes. 2. Meanwhile, heat oil in skillet. Add turkey, onion, chili powder, and cumin. Cook, stirring often, 2-3 minutes, until onion is slightly softened. Season with salt and pepper. 3. Fill each taco shell with 1/4 cup turkey mixture. Top with salsa, lettuce, cheese and cilantro. |
