This is a fast, easy and healthful way to use those turkey leftovers! Ingredients:
1 1/2 cups chopped cooked turkey |
1 cup salsa (you choose the heat) |
4 cups lettuce, torn |
3/4 cup monterey jack cheese, shredded (3 oz.) |
6 cherry tomatoes, quartered |
tortilla chips, commercial or |
tortilla chips, homemade (see low-fat recipe below) |
Directions:
1. In medium saucepan, stir together turkey and salsa. Cook 8 minutes or till heated through; stir occasionally. 2. Meanwhile, combine lettuce, cheese, and tomatoes. Add turkey mixture; toss lightly. Arrange Tortilla Chips around the side of bowl. Serve immediately. 3. Tortilla Chips: Stack four 8-inch flour tortillas; cut into quarters. Place in single layer on baking sheet. Bake in 350 degree F. oven 12-15 minutes or till dry and crisp. |
