Turkey Sweet Potato Supper |

Elegant version of a traditional turkey dinner. Ingredients:
2 (8 ounce) turkey breast tenderloins |
1 tablespoon butter |
1 (40 ounce) can sweet potatoes, drained |
1/3 cup dried cranberries |
1/3 cup maple syrup |
1/4 cup orange juice |
1/4 teaspoon grouind cinnamon |
1 teaspoon cornstarch |
2 tablespoons cold water |
Directions:
1. In a large skillet, brown turkey in butter on each side. 2. Arrange sweet potatoes around turkey. 3. Combine the cranberries, maple syrup, orange juice, and cinnamon, and pour over the top of sweet potatoes, and turkey. 4. Bring to a boil, reduce heat, cover and simmer 15-20 minutes or until turkey juices run clear. 5. Remove the turkey, and sweet potatoes to a serving platter. 6. Combine cornstarch, and water until smooth, and stir into the skillet. 7. Bring to a boil, cook and stir 1 minute or until thickened. 8. Serve with turkey and sweet potatoes. |
