Turkey Stock For Gravy Etc |

About a week or so before the holidays I make up a batch of this and freeze the broth.. The meat I use later for many different meals, enchiladas tacos etc Ingredients:
4 nice turkey wings. break apart.. you will have 3 pieces from each wing |
2 whole ribs of celery washed |
2 whole carrots washed |
2 bay leaves |
handful of whole parsley.. stems and all |
2 cloves garlic smashed |
1 whole onion halved... washed, skin and all |
3 quarts of water |
2 spoons full of chicken stock paste |
1/2 teaspoon whole pepper |
3 fresh sage leaves.. i like more |
Directions:
1. Combine all in a LARGE kettle 2. Bring to a boil 3. Lower heat to just a bubble.. low 4. Simmer for 2-4 hours 5. I usually take the meat out about half way through... before it gets to done. Let it cool.. debone and put bones back in the pot for the rest of the time. 6. While this is simmering... skim off any foam.. 7. Add water as needed if it gets to low... 8. When done.. let cool for about an hour. 9. Adjust seasonings 10. Strain through cheese cloth, throw away all veggies. 11. Put in quart zip locks and freeze flat. 12. Cut the cooled meat in chunks and freeze seperate for other dishes. 13. The stock.. use for your dressing, and gravy... 14. You WILL taste the diffrence 15. Try and enjoy |
