Ingredients:
carcass of turkey |
3 quarts water |
1 onion, coarsely chopped |
1 carrot, coarsely chopped |
1 celery stalk, coarsely chopped |
6 parsley sprigs |
1/2 teaspoon dried thyme |
1/4 teaspoon whole peppercorns |
Directions:
1. Break up the carcass so that it its into a 6-quart or larger pot. Add water and onion, carrot, and celery stalk. Bring to boil, skimming off any foam. Add parsley sprigs, thyme, and peppercorns. 2. Simmer 2 to 3 hours. Strain, then skim off any fat from surface of the broth. |
