Turkey Stew with Rice and Mashed Potato Broth |

Uses leftover turkey and fixins for a hearty but lower calorie dinner. Ingredients:
3 cups turkey |
1 small onion chopped |
8 carrots chopped |
2 cups celery chopped |
1/2 cup dried cranberries |
1/8 cup cranberry sauce |
2 white potatoes |
2 white potatoes |
4 tablespoons light cream cheese |
4 tablespoons light sour cream |
1 1/2 cup white rice |
1 tsp cinnamon |
1 tsp nutmeg |
1 tsp sage |
1 tsp black pepper |
1 tsp sea salt |
2 tablespoons chicken boullion |
Directions:
1. Saute onions, carrots and celery in 1 tsp oil. 2. Add 8 cups of water and stir in boullion. 3. Add turkey, chopped white potatoes, spices and boil for 10 minutes. 4. Add mashed potatoes, rice and cranberries, cook on Low for another 15-30 minutes. 5. Serve in mugs. |
