This sweet curry mixture gives the sandwiches a gourmet flair, while sunflower seeds offer a nutty crunch. Ingredients:
3 tablespoons light mayonnaise |
1 1/2 tablespoons prepared mustard |
1 1/2 tablespoons honey |
1/2 teaspoon curry powder |
8 (1-ounce) slices whole wheat bread, toasted |
8 ounces oven-roasted turkey breast, thinly sliced |
1/2 cup thinly sliced red onion (about 1 small) |
1/2 green bell pepper, thinly sliced |
3/4 cup alfalfa sprouts |
2 tablespoons sunflower seed kernels |
Directions:
1. Combine first 4 ingredients in a small bowl, stirring with a whisk. Spread mayonnaise mixture evenly over 1 side of each slice of toast. 2. Place 1 slice on each of 4 plates, coated side up. Top each with equal amounts of turkey, onion, bell pepper, and sprouts. Sprinkle 1 1/2 teaspoons sunflower kernels over each sandwich. Top with remaining slices of toast, coated side down. |
