This is a great recipe for leftover turkey after the holidays. My mom always made it after Thanksgiving dinner with the leftover carved turkey bones... its a great childhood memory of mine, and I could never wait till it was done! Read more ! Ingredients:
1 leftover turkey carcass/bones |
1 onion, root removed and quartered (leave on skin) |
2 stalks celery, cut into chunks |
2 carrots, cut into chunks |
6 peppercorns |
cold water |
1 large can whole tomatoes |
leftover turkey meat, roughly chopped |
1 package large pasta shells |
salt, pepper, garlic powder, oregano to taste |
Directions:
1. Put onion, celery, and carrot in bottom of large pot. Throw in peppercorns 2. Place bones on top of vegetables. 3. Cover with cold water. 4. Bring to a boil then turn down to a simmer for about 2 hours. 5. Remove from heat. Let cool. 6. Strain broth into another pot. 7. Cover and place in refrigerator overnight. 8. When ready to eat, skim fat off top of broth. 9. Heat and add tomatoes with juice, and pieces of turkey. 10. Once boiling, add a package large pasta shells. 11. Season to taste. (I like lots of pepper and some oregano) |
