From the Best of Bridge Ingredients:
1 turkey carcass |
4 teaspoons salt |
1 cup carrot, grated |
2 chicken bouillon cubes |
1 cup celery, chopped |
1 cup onion, chopped |
28 ounces tomatoes, chopped |
4 tablespoons pot barley |
1/4 cup lentils |
2 tablespoons rice |
1/4 cup parsley |
3 cups turkey, chopped |
Directions:
1. Place carcass and salt in large pot. 2. Cover with 18 cups of cold water. 3. Simmer 5 hours. 4. Strain and discard bones. 5. Refrigerate both overnight. 6. Skim fat off. 7. Add remaining ingredients. 8. Simmer 2 to 3 hours. |
