Turkey Sausages with Peppers |

Serve with polenta, either soft or grilled. Ingredients:
8 links hot turkey sausages |
6 bell peppers, using a mix of colors, cut into 1/2 strips |
1 hot red pepper, finely chopped (optional) |
1 onion, sliced thin |
2 cloves garlic, minced |
2 tbsp extra virgin olive oil |
1/4 cup fresh parsley, chopped |
Directions:
1. In a heavy frying pan, brown the sausages in the olive oil well on all sides. Add the onions, and cook until they begin to take on color. Add the peppers and garlic, and continue cooking until the peppers are tender yet not mushy, and the sausages are cooked through. This should took an additional 20 minutes or so. Remove from the heat, season with salt and pepper as desired, and mix in the fresh parsley. Serve. |
