Turkey Salad with Celery and Cranberry |

Taken from Williams-Sonoma's Eat Well cookbook. I substituted Costco rotisserie chicken for turkey, plain Greek yogurt for plain low-fat yogurt and regular mayonnaise with olive oil mayonnaise. Ingredients:
1 1/2 cups celery, finely chopped |
2 cups turkey, roasted |
1/4 cup fresh parsley, minced |
2 green onions, minced |
1/4 cup dried cranberries |
1/4 cup plain low-fat yogurt |
2 tbsp mayonnaise |
1 tsp salt |
1 tsp pepper |
Directions:
1. Combine celery, turkey, parsley, green onions, cranberries, yogurt and mayonnaise in a bowl and mix well. Season with salt and pepper. Mix again and let stand at room temperature for 30 minutes, or chill for at least 3 hours to blend flavors. Enjoy over butter lettuce or use as a sandwich spread. |
