Turkey Salad Stuffed Eggs |

I've made these with leftover turkey and with ground turkey. Either way is good. Ingredients:
8 large eggs, hard boiled and peeled |
2 celery ribs, cut into chunks |
2 green onions, diced |
1/2 red bell pepper, seeded and chopped |
3/4 lb cooked turkey |
3 tablespoons mayonnaise |
2 tablespoons prepared brown mustard |
1 tablespoon cider vinegar |
1 teaspoon granulated sugar |
1/4 teaspoon salt |
Directions:
1. Halve the eggs crosswise and remove the yolks. 2. In a food processor, combine celery ribs, green onions, red bell pepper and cooked turkey. 3. Finely chop, but do not overprocess. 4. Stir in mayonnaise, prepared brown mustard, cider vinegar, sugar, and salt. 5. Mash the egg yolks and mix into the vegetable mixture. 6. Spoon one rounded tablespoon into the hollow of each egg half. 7. Cover and refrigerate. |
