A rice dish that can be served with a salad or as a side for chicken or fish. Ingredients:
1 pound ground turkey breast |
1/2 onion |
3 cups white rice |
3/4 cup lentils |
4 1/2 cups fat free chicken broth |
2 tbl extra virgin olive oil |
1 tsp turmeric |
1/2 tsp salt |
1/4 tsp pepper |
Directions:
1. Chop onion and brown in 1 tbl Olive Oil. Add turkey and brown with turmeric. Cook lentils until just tender. In a rice cooker add rice, salt, pepper and broth with last tbl oil. Mix in cooked ingredients and cook until done. 2. If you don't have a rice cooker this can be done in a pot but you'll need to bring the ingredients to a boil and then lower the heat and cook until all the liquid in absorbed. |
