Turkey Quinoa Waldorf Salad |

This a delicious recipe I took from The Complete Food Allergy Cookbook by Marilyn Giovanni. I use this cookbook all the time to get some good recipes that are free of common food allergens (except nuts). This is a yummy sald that is equally as god with leftover turkey or canned. I use canned in the summer as I am not cooking so many turkeys then. Ingredients:
1 cup cooked quinoa |
1 apple, peeled and chopped |
1 stalk celery, chopped |
1 medium carrot, shredded |
1/4 cup chopped walnuts |
1/3 cup raisins |
1 (5 ounce) can turkey, shredded |
2 tablespoons mayonnaise |
6 large lettuce leaves |
Directions:
1. Mix all ingredients together except lettuce. 2. Chill and serve on lettuce leaves. Season with salt and pepper as desired. |
