TURKEY POTATO LEEK SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Harrison Estate in Crandall, Texas in 1999. Ingredients:
2 baby leeks or 1 large leek |
1/4 cup olive oil |
2 cloves garlic chopped |
3 sprigs fresh thyme divided |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
2 cups mashed potatoes |
3 cups turkey broth |
2 cups cooked turkey chopped |
Directions:
1. Slice white portion of leeks into thin rounds. 2. Heat olive oil in a heavy pot over medium heat then add leeks and sauté until soft. 3. Add garlic and continue to cook stirring occasionally for 5 minutes. 4. Pull thyme off 2 sprigs and add to the pot along with salt. 5. Add potatoes stirring to combine then just cover with broth. 6. Stir in turkey and cook another 5 minutes to warm through. 7. Add salt and pepper to taste then pour into warmed bowls and garnish with thyme. |
