These are really good - moist and flavorful. Great use for leftover roast turkey or chicken. The green sauce is the type known as taco sauce . I serve these on shredded iceberg lettuce, topped with sliced radishes, The sides are usually Mexican rice and refried beans, though a lot of times we just eat them plain, as a snack. My kids like to top these with Tapatio sauce or with salsa. One of my friends tops them with sour cream and salsa. Ingredients:
4 cups shredded cooked turkey or 4 cups cooked chicken |
12 ounces mexican green taco sauce, bottled, i use san marino brand |
1/2 cup finely diced onion |
1 cup chopped fresh cilantro, loosely packed |
4 ounces black olives, sliced (optional) |
36 corn tortillas |
1/2 cup canola oil, for frying |
Directions:
1. Mix first five ingredients in large bowl. 2. Start heating oil in skillet. 3. Wrap half the tortillas in very damp paper towels and microwave for 2 minutes. 4. Start filling and rolling each tortilla with turkey or chicken mixture. Make about 6 at a time and fry. 5. You can carefully place them into the skillet, seam side down, using tongs, or you can secure them with a toothpick if you like, before frying. 6. Brown on one side and then turn over and brown lightly on the other side. 7. Remove to wide bowl, lined in paper towels, to absorb excess oil. I shake them pretty well above the skillet before standing them on end in the bowl. 8. Repeat microwave procedure with the rest of the tortillas. Fill, roll, fry, drain. |
