Easy and healthy chile recipe
Ingredients:
olive oil
2 lbs ground turkey or chicken
2 cans any beans drained and rinsed
3 cans ('15oz each) tomato puree
4 fresh tomatoes diced for garnish
cilantro for garnish
1 green bell pepper diced
1 red bell pepper diced
2 poblano peppers minced
optional peppers of choice, more the merrier
2 medium onions diced
1 tsp garlic crushed or minced
1 tablespoon chile powder
1 tablespoon ground cumin
1 tablespoon cocoa powder
2 tablespoons balsamic vinegar
bottled hot sauce to taste
Directions:
1. Heat large pot add oil
2. fry peppers and onions for a few minute until onions start to clear
3. add meat and cook through, about 5 mts
4. add garlic, chile powder, cumin and cocoa powder
5. stir for about a minute
6. add tomato puree and vinegar (hot sauce to liking)
7. bring to boil then cover and simmer for about 1/2 hour stirring occasionally
8. add beans and let heat through for about 5 mts
9. serve in bowls
10. garnish with chopped fresh tomato and cilantro
