Ingredients:
1 turkey carcass containing about 1 1/2 pounds leftover turkey |
1 large onion, finely chopped |
2 teaspoons salt |
1/2 teaspoon pepper |
1 sprig fresh thyme |
3 quarts water |
Directions:
1. Combine first 6 ingredients in a large stock pot; bring to a boil. Reduce heat; cover and simmer 2 hours or until meat falls off the bones. 2. Remove bones and meat from broth; discard bones. Coarsely chop meat; return to broth. 3. Bring broth to a boil; reduce heat. Drop noodles into simmering soup. Cook, uncovered., 10 minutes or until noodles are tender. 4. Ladle soup and noodles into individual serving bowls; serve warm. |
