An easy soup that can be made with leftover holiday turkey and veggies. Not expensive, low calorie, and very filling. Ingredients:
8 cups chicken broth |
14 oz tomatoes |
1 tablespoon instant chicken bouillon |
1 1/2 tsp oregano |
1 tsp thyme |
1/4 tsp salt |
1/8 tsp pepper |
1 cup potato |
3 cups mixed vegetables |
2 cups turkey |
1 1/2 cups noodles |
Directions:
1. In large heavy saucepan combine broth, tomatoes, bouillon granules, oregano, thyme, salt, pepper, and potato. Bring to boiling; reduce heat. Cover and simmer 45 minutes or until potatoes are tender. Add turkey and uncooked noodles. Simmer, 8-10 minutes, or until noodles are tender. Makes 10 servings. |
