This is from an old Better Homes & Garden Cookbook. I first made this when we were newleyweds 28 years ago and I had leftover turkey to use. I've been making ever since and we still enjoy it!
Ingredients:
1 1/2 cups milk
1 (10 1/2 ounce) can cream of mushroom soup
3 beaten eggs
2 cups cooked fine noodles
2 cups cubed cooked turkey
1 cup soft breadcrumbs (1 1/2 slices)
4 ounces shredded colby-monterey jack cheese
1/4 cup chopped green pepper
1/4 cup melted butter
2 tablespoons chopped pimento pepper
Directions:
1. Mix milk, soup and eggs. 2. Then mix with all other ingredients in a bowl. 3. Transfer to a greased 9 x 13 pan. 4. Bake 350 for 30-40 minutes until knife inserted off center comes out clean. Cut in squares to serve.
