( ) Serve over white rice, it is delicious served with eggs like they do in Mexico. Ingredients:
2 cups cooked turkey, shredded |
2 tablespoons corn oil, or vegetable oil, not olive |
3 cups turkey broth, or chicken broth |
1 onion, medium, chopped |
15 ounce tomatoes, whole, drained |
1/4 cup peanut butter |
1/4 cup of baking chocolate chips, or baking chocolate |
2 tablespoons sugar |
1 1/2 tablespoons chili powder |
1/4 teaspoon cinnamon, ground |
Directions:
1. Saute onions in hot oil 4 minutes until brown. 2. Deglaze pan with 3 cups chicken broth 2 minutes. 3. Add tomatoes, peanut butter, chips, sugar, chili powder and cinnamon. 4. Bring to a boil, lower heat and simmer for 15 minutes uncovered. 5. Remove from heat and puree in blender, or use an immersion blender like a braun. 6. Return to pan and add turkey meat. 7. Serve over white rice, it is delicious served with eggs like they do in Mexico. |
