My mom found this great recipe in a Susan Branch cookbook. The flavor is unique, and it's healthy, too! Ingredients:
2 teaspoons olive oil |
1 cup onion, chopped |
1 cup carrot, diced |
1 cup mushroom, chopped |
2 egg whites |
1 tablespoon a-1 steak sauce |
1/2 cup green onion, chopped |
1/2 cup ketchup |
2 tablespoons fresh parsley, minced |
1 teaspoon black pepper |
1 teaspoon salt |
1 1/4 lbs ground turkey |
4 slices stale bread |
Directions:
1. Put vegetables through the food processor until finely chopped. 2. Saute vegetables in olive oil over high heat for 7 minutes. 3. Let cool. 4. Mix egg whites, A-1, green onion, ketchup, parsley, salt and pepper. 5. Process bread in food processor. 6. Combine breadcrumbs, turkey and vegetables in a large bowl. 7. Place mixture in either a loaf pan or a 8/9 in square. 8. Bake at 350 for approximately 50 minutes. 9. Note - bake time will depend on choice of pan. 10. Optional - top with more ketchup! |
