Turkey Meatloaf

A healthier version of meatloaf.
Ingredients:
2 lbs ground turkey (85/15)
1 (14 1/2 ounce) can tomato sauce
2 -2 1/2 cups crushed saltine crackers
2 -3 roasted red peppers
1 tablespoon garlic powder
1 tablespoon onion powder (or flakes)
1 tablespoon parsley
2 cups ketchup
Directions:
1. Pre-heat oven to 350 degrees.
2. Dice roasted red bell peppers. You can use a jar of marinated red bell peppers.
3. Combine all ingredients except ketchup.
4. Mold mixture into loaf form.
5. Cover meatloaf mixture with ketchup (add as much as desired).
6. Bake meatloaf for 1 hour or until turkey is cooked through.
7. Additional ketchup may be added after meatloaf is done baking.
