Turkey Meatballs in a Tomato Sauce |

Nigella Lawsons fabulous meatballs Ingredients:
500 g minced turkey |
1 tsp olive oil |
1 tsp sugar |
2 tsp dried thyme |
400 g can tomatoes |
400 g can tomatoes |
20 g parmesan |
20 g breadcrumbs |
40 g egg white |
2 onions |
2 stalks celery |
5 cloves garlic |
Directions:
1. Blitz celery, onion and garlic in a food processor (or chop as finely as possible) and set aside roughly 2 tbsp. Fry the mix in the oil for around 10 minutes with 1 tsp thyme. 2. Add the tomatoes and fill one can with water, add, and set on a low simmer, seasoning with salt pepper and the sugar. 3. Now prepare the meat; put everything thing in a bowl (grated parmesan and remaining thyme) and combine - not too much as this will lead to dense meat ball consistency. 4. take heaped teaspoon amounts and form into balls and place on a baking tray lined with parchment (about 48) 5. Plop into tomato sauce trying to arrange in a circle (from the outside) 6. Simmer for 30 mins then serve with accompaniment of your choice. 7. To serve 8 this will be 6 meatballs per person ( I served to my hungry boyf and this seemed enough even for him!) |
