Turkey Meatballs

From Spaghetti & meatballs recipe. Makes approx. 30 sm-med. size meatballs. Easy to overcook.
Ingredients:
1 lb turkey, ground
1 slice whole wheat bread, pulsed into crumbs
1/4 cup parmesan, grated
1/2 cup carrot, finely grated (approx. 1 med size)
1/3 cup onion, grated
1 clove garlic, minced
2 tbsp parsley, fresh minced leave
2 tsp thyme, fresh minced leaves
1 egg, lightly beaten
1/2 tsp salt
1 pinch pepper, freshly ground
Directions:
1. Combine ingredients and shape into balls.
2. Place on baking sheet (sil pat) and place under broiler for 3-4 minutes until browned and almost cooked through.
3. Add to pasta sauce and simmer additional 10 minutes until meatballs have absorbed some sauce and cooked through.
4. Note - easy to overcook under broiler and dry out. Finely ground meat is best. Don't leave out carrots.
