Use ground turkey in this dish (a combination of light and dark meat) for a juicy and flavorful meat loaf. Ingredients:
cooking spray |
1 cup minced onion |
1 (8-ounce) package pre-sliced mushrooms, finely chopped |
1 cup pre-shredded carrot, finely chopped |
1 tablespoon minced garlic |
1 pound ground turkey (light and dark meat) |
1 cup quick-cooking oats |
1/4 cup ketchup |
1/3 cup chopped fresh parsley |
1 tablespoon worcestershire sauce |
1 large egg, lightly beaten |
1 teaspoon salt |
1/2 teaspoon black pepper |
2 tablespoons ketchup |
roasted red bell pepper sauce |
Directions:
1. Preheat oven to 375°. 2. Heat a large nonstick skillet coated with cooking spray over medium-high heat; add onion, mushrooms, and carrot. Cook, stirring occasionally, 6 to 8 minutes or until vegetables are tender and all liquid is evaporated. Add garlic; cook 1 minute. Remove from heat; cool slightly. 3. Combine onion mixture, ground turkey, oats, 1/4 cup ketchup, and next 5 ingredients in a large bowl, mixing well. Press turkey mixture into an 8 x 4-inch loaf pan coated with cooking spray. Brush 2 tablespoons ketchup over top. 4. Bake at 375° for 55 minutes to 1 hour or until a thermometer registers 170°. Let stand 10 minutes. Remove from pan and slice. Serve with Roasted Red Bell Pepper Sauce. |
