The sweetness of the mango contrasts with the saltiness of the smoked turkey. Everyone loves these little appetizers. Just cut the tortillas in 1/2 for a different kind of lunch sandwich. Ingredients:
6 oz. soft goat cheese |
1/3 cup bottled mango chutney |
4 10 inch flour tortillas |
8 oz. thinly sliced smoked turkey breast |
2 cups arugula or fresh spinach leaves |
8 fresh or canned mango slices, drained |
Directions:
1. In a small bowl, stir together the goat cheese and mango chutney. Spread mixture onto tortillas, leaving a 1 inch space along an edge of each tortilla 2. Arrange turkey slices on goat cheese mixture. Top the arugula leaves. Cut any large mango slices in half lengthwise; pat dry. Place mango slices on greens along the edge opposite the 1 space. Roll up tortillas tightly, starting with the edge with the mango. Cover and chill for at least 30 minutes or up to 4 hours. 3. To serve, cut diagonally into 3/4 inch thick slices. 4. Makes about 32 slices |
