One pound of boned, skinned chicken breast halves may be substituted for the turkey. Ingredients:
6 ounces uncooked linguine |
cooking spray |
2 1/2 teaspoons dark sesame oil |
1 pound turkey cutlets, cut into strips |
2 cups snow peas, trimmed |
1 cup red bell pepper strips |
1 cup broccoli florets |
1/2 cup shredded carrot |
2 tablespoons chopped green onions |
1 teaspoon minced peeled fresh ginger |
1/8 teaspoon crushed red pepper |
2 garlic cloves, crushed |
3 tablespoons low-sodium soy sauce |
Directions:
1. Cook pasta according to package directions, omitting salt and fat. Drain. 2. Coat a large nonstick skillet with cooking spray; add 1 teaspoon oil. Place over high heat. Add turkey, and stir-fry 5 minutes or until done. Add snow peas and next 7 ingredients; stir-fry 4 minutes. Add pasta and soy sauce; cook 2 minutes. Remove from heat; add remaining 1 1/2 teaspoons oil, and toss well to coat. |
