Turkey Kielbasa with German Kraut |

Compared to traditional kielbasa recipes, this sausage and kraut dish is lower in fat and has fewer calories, thanks to the turkey kielbasa. It's still slightly high in sodium, though, if you're watching that. Ingredients:
1 teaspoon olive oil |
1 pound turkey kielbasa, cut into 8 pieces |
1 1/2 cups chopped onion |
1 (16-ounce) jar bavarian-style sauerkraut, rinsed and drained |
1/2 cup water |
1/2 cup dry white wine or fat-free, less-sodium chicken broth |
2 teaspoons caraway seeds |
1 bay leaf |
1/4 teaspoon black pepper |
Directions:
1. Heat oil in a Dutch oven over medium-high heat. Add sausage, and sauté 8 minutes or until browned. Remove sausage from pan; cover and keep warm. 2. Add onion to pan, and sauté 2 minutes. Stir in sauerkraut and remaining ingredients. Return sausage to pan; cover, reduce heat, and simmer 20 minutes. Discard bay leaf. |
