Made with roast turkey, broth from simmering bones with herbs-no salt added. Ingredients:
2 oz scallions |
1 oz ginger root |
2 oz carrots |
4 oz kale |
8 oz mushrooms |
2 cups turkey |
5 cups broth (i6183) |
1 tablespoon safflower oil |
Directions:
1. Wash & slice scallions; peel & slice thinly ginger root and carrot 2. Wash, trim & chop kale 3. Wash & slice mushrooms 4. Heat oil in skillet, add scallions, carrots & ginger root & cook for 2-3 minutes until they begin to soften 5. Add kale & stir & cook until wilted 6. Add mushroom and stir & cook for 2-3 minutes 7. Add turkey and broth 8. Taste & correct seasoning 9. Bring to a boil; cover & reduce heat, simmer for 20 minutes until heated through 10. Serve or freeze portions for later use. |
