Hearty home-style meal made with left over holiday turkey Ingredients:
3/4 pound boneless skinless turkey breasts, cut into bite sized pieces |
12/3 cups unsalted chicken broth |
11/2 cups uncooked rice |
4 ounces smoked turkey sausage, diced |
1 can (1 pound) unsalted tomatoes, crushed |
1/2 cup thinly sliced celery (include leaves) |
1/2 cup chopped green bell pepper |
1/2 cup chopped onion |
1 tsp crushed fresh garlic |
1 bay leaf |
1-2 tsp cajun or creole seasoning |
Directions:
1. 1. Coat large skillet with non-stick cooking spray, and preheat over med-high heat. Add turkey, and stir-fry for 2-3 minutes, or until browned if using holiday left overs. 2. 2. Add the remaining ingredients to the skillet, and stir to mix well. Bring the mixture to a boil, reduce the heat to low, and cover. Simmer for about 50 minutes, or until liquid has been absorbed and the rice is tender. 3. 5. Remove from heat, and allow to sit, covered for 5 minutes. Serve hot. |
